OUR COOKING IDEA
We propose a fine seafood cuisine both sea and freshwater from the strong contemporary imprint that draws from tradition in a way that is free and never binding.
We use extraordinary raw materials that we treat with respect and gratitude to build dishes that know how to astonish and excite while maintaining an obvious simplicity and substance.
The goal is to bring all diners to the same level, both lovers of the simple flavors, both those looking for a kitchen from the slightly more gourmet nuances.

One who, in the way of thinking and judging, diverges from commonly accepted views and firmly and decisively disagrees with the principles of a doctrine and the ideologies accepted by the group to which he or she belongs.
"When I opened La Chiusina, the first choice was whether or not to propose the Tortellino di Valeggio. Giving up the dish that symbolizes tradition meant revolutionizing the proposal; I did so by choosing a more contemporary, fish-based cuisine: in a tourist area so tied to its roots, it seemed a gamble destined for failure. Even today, when I say that we "reneged" on the 'Love Knot,' many look at me as a heretic."

River
unexpected
The freshwater cuisine is, for obvious logistical reasons, our flagship and our pride. The creation of dishes with river fish is inspired by a feeling of enormous gratitude for this wonderful, rich and generous land that hosts us and gives us extraordinary raw materials.
We have dedicated our Tasting Route "Currents" to the river.

Sea
original
Seafood cuisine with its millennial history Is the most cross-cutting one.
Very fresh raw materials give rise to an alternation of dishes loosely inspired by "traditional" recipes and others that are influenced by our travels and experiences.
At the sea, we dedicated the “Onde” (Waves) Tasting Path.

GARDEN

Vegetables begin to speak a language rich in color and nuance, they break free from the role of simple side dish to become, through the use of different cooking and textures the absolute protagonists of our small but intriguing vegetable proposal
To vegetables we have dedicated our "Rive" Pathway.

Dessert

You will not find a chart of our desserts because they simply do not exist; we prepare them daily following the inspiration and mood of the moment.

We only use Italian and organic flours, yeast, eggs and, when possible, fruit. We always use Valrhona chocolate in the preparation of our desserts.

Wide selection of both Italian and French white wines.
Intriguing and unsurprising selection of Italian Bubbles.
Curated selection of Champagnes with a preference for small and medium-sized Vignerons.

Alternating between tasting courses and small surprises will allow you to embark on a real journey within our cooking philosophy.

ABOUT THE TASTING ROUTES
They are served the same for the entire table and for a minimum of two people.
They are not indicated in the presence of intolerances, allergies or specific dietary regimens.
They are available for reservations by 1:30 p.m. for lunch and 9 p.m. for dinner.
They are always proposed for tables larger than 4 people.

ABOUT THE COMPOSITIONS
We do not have a classic a la carte proposal.
Our dishes are always offered in Compositions of two or three choices
priced by default and for this reason they are not priced individually.
The single-course option among those present in "Our Dishes" is available only for children under 12 years old at the price of €40.
You will not find the classic division between appetizers, starters, and main courses because
we want the choice of dishes to be inspired only by curiosity, taste and inspiration;
we will take care of suggesting the most suitable order of release for you to enjoy them to the fullest.
